A premium bacon-cheeseburger, with extra fixings! Melted New York sharp cheddar, smoked bacon, Cajun spiced fried onion strings and a sweet chow-chow relish.

Cajun Onion Strings
1 large onion, thinly sliced
1 cup all-purpose flour
1 1/2 teaspoons salt
1/2 teaspoon white pepper
Cajun spice blend, to taste
1 cup vegetable oil

Separate onion slices into rings. In a medium bowl, combine flour and seasonings; mix well. In a large skillet, heat oil over medium-high heat. Place onion rings in flour; coat well then carefully place in hot oil. Fry onions 6 to 8 minutes, until golden. Drain on a paper towel-lined plate, and serve immediately.

Easy Chow Chow
TGI Friday's Copycat Recipe

Serves 10

1 head green cabbage
1 dozen green tomatoes
1 or 2 red peppers
1 or 2 green peppers
4 cups sugar
1 quart red cider vinegar
1 teaspoon celery seed shopping list
3 tablespoons allspice

Using a food processor to grind cabbage, tomatoes and peppers together. Mix sugar, vinegar and spices in saucepan. Bring to a boil and boil for 5 minutes. Add cabbage mixture and bring to a boil again. Cook about 3 to 5 minutes. Pour into pint jars and seal. Good with peas and greens.

A creamy craft beer cheese sauce made with regionally crafted beer tops this burger, along with fresh sliced jalapenos  breaded fried jalapenos, chipotle mayo, lettuce, tomato and guacamole. The spice comes from fresh jalapenos on bottom and fried jalapenos on top.  Not sure about how to make the beer cheese since I haven't tasted it yet.

TGI Fridays' Copycat Recipe

Makes 1 bowl

2 avocados
1/4 onion
1/3 bunch cilantro
1 Roma tomato
1 jalapeno pepper
1 tsp salt
1 lime

Cut the avocados lengthwise in half around the seed. Scoop out and throw away the seed and use a spoon to scoop the avocado into a bowl. Finely chop the 1/4 onion, cilantro and jalapeno pepper and add to the bowl. Dice the tomato and add to the bowl. Mix everything together, sprinkling in the salt halfway. Squeeze on some lime juice to prevent oxidization and browning.

To determine if an avocado is ripe, give it a little squeeze. If it is soft it is ripe. If it is hard put it back. Stay away from avocados that are too soft as they may already have roots sprouting inside them.

Chipotle Mayo

1/2 cup mayonnaise
1/2 cup sour cream
1/4 teaspoon dried oregano leaves, to taste
2 chilies (from a tin of Chipotle ChilIes in Adobo Sauce)

Remove 2 chilies from tin of chipotle in adobo sauce and finely chop; letting some adobo sauce cling to chilies is recommended. In a bowl, whisk together chilies with oregano, mayo and sour cream. Cover and refrigerate until chilled, about 1 hour; this lets flavors blend.

An awesome burger with an amazing kick! Topped with melted pepper jack cheese, sauteed peppers and onions, crispy Cajun spiced fried onion strings with chipotle spread and fresh sliced avocado.

Crumbled bleu cheese, smoked bacon, sauteed onions and garlic maison butter.
"Maison" means house made so you can whip up your own garlic butter concoction.  I would toast the buns with the garlic butter before building the burger.


Topped with melted Farmhouse cheddar cheese,  smoked bacon, and fresh guacamole. Layered with our Dijon mustard sauce, crisp leaf lettuce, vine ripe hand cut tomatoes, red onions, and crisp pickles.

Topped with melted Swiss cheese, tender sauteed mushrooms, and rich smoky caramelized onion. Layered with a Dijon mustard sauce, crisp leaf lettuce, vine ripe hand cut tomatoes, red onions, and crisp pickles.
