ROASTED RED PEPPER SAUSAGE AND CHICKEN PENNE
TGI Friday's Copycat Recipe
1/2 lb. hot Italian sausage (about 3 links) remove from casing
1 1b. boneless, skinless chicken breasts, cut into 1 inch cubes
1 small red or sweet onion, chopped or sliced
1 jar roasted red peppers, chopped
1 jar marinara sauce
1 (12 oz) box penne pasta
freshly grated Parmesan cheese
Cook pasta according to package directions. Drain, reserve 1/4 cup pasta liquid. While pasta is cooking, brown sausage, breaking it up into little bits. Remove sausage and set aside. In same skillet, brown chicken. Add onion and roasted red peppers. Cook for about 2 minutes. Add sausage and marinara sauce and parsley. Simmer. Add sauce to cooked pasta. Mix well.
Serve warm with grated Parmesan cheese.
