PARMESAN CRUSTED CHICKEN
TGI Friday's Copycat Recipe
A sauteed chicken breast basted with Caesar vinaigrette dressing, then finished with a Parmesan crust topping. served with three-cheese tortelloni tossed in spinach Alfredo sauce and a side of our fresh tomato mozzarella salad. Lets, break this dish down into its components.
Parmesan Chicken Breast
Marinate a chicken breast in Caesar dressing and grill until done. Mix equal parts Italian bread crumbs and Parmesan cheese in a bowl with a little melted butter. Place the mixture on top of the chicken and brown under the broiler.
Pasta and Sauce
To make the sauce: Heat 1/2 a jar of Alfredo sauce and add fresh chopped spinach.
To make the pasta: Buitoni makes a nice 3 cheese tortellini that you can find in the frozen foods section of the grocery store. Portion out enough for one serving and cook according to package directions. Combine the pasta with the sauce and place the breaded chicken breast on top. Garnish with fresh herbs (basil,oregano or parsley).
This looks like a simple caprese salad with sliced tomatoes and mozzarella cheese. Garnish with olive oil and basil.
