Southwest Wedge Salad

Southwest Wedge Salad
What's in it?  Diced tomato, red onion, avocado, tortilla chips, Monterrey Jack and Cheddar cheeses drizzled with an avocado vinaigrette and chipotle crema make up this salad.

Avocado Vinaigrette
TGI Friday's Copycat Recipe

Makes 1 Cup

1 large ripe avocado (or 3 small)
2 garlic cloves
1/4 teaspoon dried oregano (or tablespoon fresh)
1/4 teaspoon white pepper (optional)
1/3 cup garlic-flavored red wine vinegar
2/3 cup olive oil
1 fresh serrano pepper (or jalapeno pepper-optional for heat)

Place all ingredients except the olive oil in a blender. As you begin to blend, slowly pour in olive oil to desired consistency. If you like it tangy, you may wish to add more vinegar if you like it thinner you may want to use more olive oil. Add salt to taste. If you want it spicy, add a serrano or jalapeno pepper.

Chipotle Crema
TGI Friday's Copycat Recipe

Makes 1 1/2 Cups

2  chipotle chilies in adobo sauce
1 1/2 cups sour cream

Wearing kitchen gloves, pull out and discard seeds and veins from chilies. Mince chilies. In a small bowl, mix chilies, 2 tablespoons of the adobo sauce, and the sour cream.

If making the crema ahead cover in an airtight container and chill in the refrigerator.  The extre chilies will freeze well.
